NATURALLY FERMENTED FOR 12 DAYS SKIN CONTACT (30% WHOLE BUNCH) UNTIL WE FELT IT READY TO PRESS AND FINISH ITS FIRST FERMENTATION IN A RECYCLED IPC.
A PORTION OF THE FERMENT WAS RAKED OFF AND FROZEN ON DAY 2.
IN MID FEBRUARY 24 WE DEFROSTED THE JUCE AND BLENDED IT WITH THE FINISHED WINE JUST PRIOR TO BOTTLING. THIS ALLOWED A SECONDARY FERMENT IN THE BOTTLE CREATING THE FIZZ IN THE BACCHUS WINE.
THE WINE WAS FINALY DISGORGED OF ITS LEES IN LATE AUGUST 2024.
THE RESULT IS A DEEP ORANGE LIGHTLY SPARKLING WINE, SLIGHTLY BITTER TANNINS ARE EVIDENT ON FIRST TASTING THEN IT LEADS YOU TO ITS DISTINCT FLORAL, CITRUS AND GRASSY AROMAS, THINK CARAMELISED GRAPEFRUIT. ENGLISH BREAKFAST WINE.
THIS WINE HAS A TOUCH (20mg/L) OF S02 ADDED AT DISGORGING OTHERWISE ZERO ADDITIONS, ADDITIVES, FILTRATION. IT IS A COMPLETELY NATURAL LIVING WINE.
